Ethel was a loan shark’s mistress from Detroit. After dumping him for a better man, she relocated to the current address in Waterloo in 1994. Her sons Rob, JR, Brow, Darcy and Erik now work alongside their cute cousins from the North: Shannon, Jill, Sarah, Janet and Glenda.

She brought along her own World Famous Cook Crew to recreate those famous recipes from the South. Ice, Finch, Ape, Juse, Sarah, O-Dog, Joe and Kelsey make it all happen. Your host Glenn will always be happy to sit at the end of the bar and swap lies with you.

Because of our roots in Detroit, we’ve recreated some of Ethel’s favourite Southern cooking such as world famous pulled pork, homemade beans, and rajah. Everything is made from scratch.

Drop in anytime and plunk yourself down at one of our slightly used kitchen tables. And let it happen.

The Jackalope (Lepus-temperamentalus) is one of the rarest animals in the world. A cross between an extinct pygmy-deer and a species of killer-rabbit, they are extremely shy. None have ever been captured alive and this rare drawing shows our mighty buck about to strike.

It is said that a jackalope may be caught by putting a flask of whisky out at night. The jackalope will drink its fill of whisky and its intoxication will make it easier to catch. Jackalopes will also only breed during electrical storms with hail, explaining its rarity.

Known by the ancients as “deerbunnies”, it wasn’t until the early 1960s that the modern more fearsome “jackalope” name was adopted.

Death Valley (or D.V.) was one such fearsome jackalope that fought in many battles during the early years. He was the king of all jackalopes and worked tirelessly to protect his family and friends. Unfortunately like most warriors, one day he was defeated, suddenly leaving all his crown duties to his much younger and gentler brother. Whisper had some different ideas on how to solve the warren’s problems. He found that if he nibbled on coffee beans in the morning and sipped whisky at night, everything would be quite alright. Soon his entire warren was nibbling beans in the morning and sipping whisky at night!

We are a small brewery/pub located in the heart of Waterloo. Our focus is on a small craft selection of premium ales and lagers that can only be found in shop. Every batch is custom. Every beer must be clean and fresh. Every beer must be perfect.
