Located in Gravenhurst Ontario, the gateway to Muskoka, Sawdust City Brewing Company is dedicated to the art and science of creating exceptional craft beers. We produce traditional ales in an array of styles, but there is nothing traditional about the flavour. Our brewmaster, Sam Corbeil, and his talented team create award-winning exciting beers that expand the borders of traditional flavour profiles. The rule at Sawdust City is there are no rules. We are just here to make great beer.
In addition to our five year-round core brands, we brew exceptional seasonal offerings, exciting limited batch brews, barrel-aged and experimental beers. Of course all of our beers are all-natural and made with only the finest ingredients. We don’t take ourselves too seriously as our labels express and hey, beer should be fun! What we do take seriously is the quality of our beers, which we are sure you will enjoy.

On Wednesday, September 16th, 2015 the entire Sawdust City brew team travelled to Nottawa, Ontario to the Clear Valley Hop Farm. That morning we helped with the harvest of their Plantation # 1, Row # 27 Chinook hops. By 11am the 140lbs of hops were picked and bagged. We then travelled the 115km back to the brewery and by 1pm that afternoon the hops were in the brew kettle. Balanced with a nice bready malt bill this “Wet Hop” pale ale is loaded with the freshness of whole cone hops, lemon and light citrus.

That was written many eons ago by Toftorg Golshop, Ruler of the Third Empire of Uranus on one of his many voyages to earth (it was stolen and rewritten by “you know who” sometime later). And while on earth for one of those trips, Toftorg grew fond of the rich, robust stouts of Northern England. Designed to withstand the grueling voyage from Earth to Uranus, Long, Dark Voyage is an Uranal stout of the highest order. Tongue crushingly bitter and dry as a bone, this dark chocolate treat is quite dangerous and will sneak up on you from behind if you don’t keep your wits about you.

A crisp, clean, dry-hopped Pilsner, just in time for the holidays!
This lager was fermented very well and very slowly, then finally dry-hopped with heaps of Spalt hops. The long-awaited result offers aromas of lemon pepper, with a light, bready malt-body, and a balanced bitter finish. Sometimes beer takes its time and let you know when it’s done. We had the luxury of allowing this Pils to lallygag for a truly spectacular end-result. It also prompted a great reminder for us to take the time to slow down and enjoy time with those around us at this time of year. There’s no better beer to accompany that mantra than with this slow-fermented Italian-Style Pils.
Sam’s Take I’ve always been a fan of German-style pilsners (or pils). Since my days at the VLB, it’s been a bit of a white whale for me. I’ve always wanted to recreate the pils I had at the school…the flavour, the aroma…they were perfect! Taking those German pils roots and applying a more North American approach with dry hopping, we end up with what has now been called an “Italian Style Pils”. Popularized by Birrifico Italiano’s Tipopils, it’s basically the modernization of a traditional lager. Slow is our interpretation of this “new” style. Dry-hopped and then lagered for 4 weeks, it’s dry, crisp, clean with delicate aromas of lemon and spice. Sometimes you gotta take things Slow to get them right.

Sam’s Take We’ve brewed LDV for 8 years now. Over those years, we’ve done a number of different iterations and enjoy trying different variations using LDV as the base. Last winter, we brewed Coffee Vanilla LDV and then Chocolate Oak-Aged LDV. We really liked the version with coffee and vanilla so we decided to do it again this year using a similar recipe. We loved the coffee we got from Cut Coffee last year, but Lee Knutilla, the head roaster has since opened up a new shop called Quietly Coffee. We tracked him down and asked if he’d be into working with us again. He was and was even able to get us beans from Katia Duke in Honduras; the same farm we used last year. We feel this year’s version is even better than last year’s!

The last release in our series of winter Belgian style beers, Anticipation is Freshly Zambonied Ice is a Belgian Strong Golden Ale. It pours a deep, burnt gold, with a fluffy white cap. Very effervescent, this ale is loaded with aromas of clove, spice and apple. It’s balanced with flavours of apple, spice and bubblegum, and it is deceptively drinkable. Flavourful, with a semi-sweet finish, Anticipation is Freshly Zambonied Ice is wonderful on its own or accompanied by your favourite meal.
