Located in Gravenhurst Ontario, the gateway to Muskoka, Sawdust City Brewing Company is dedicated to the art and science of creating exceptional craft beers. We produce traditional ales in an array of styles, but there is nothing traditional about the flavour. Our brewmaster, Sam Corbeil, and his talented team create award-winning exciting beers that expand the borders of traditional flavour profiles. The rule at Sawdust City is there are no rules. We are just here to make great beer.
In addition to our five year-round core brands, we brew exceptional seasonal offerings, exciting limited batch brews, barrel-aged and experimental beers. Of course all of our beers are all-natural and made with only the finest ingredients. We don’t take ourselves too seriously as our labels express and hey, beer should be fun! What we do take seriously is the quality of our beers, which we are sure you will enjoy.

Plantation 1, Row 27 Wet Hop Pale Ale
On Wednesday, September 16th, 2015 the entire Sawdust City brew team travelled to Nottawa, Ontario to the Clear Valley Hop Farm. That morning we helped with the harvest of their Plantation # 1, Row # 27 Chinook hops. By 11am the 140lbs of hops were picked and bagged. We then travelled the 115km back to the brewery and by 1pm that afternoon the hops were in the brew kettle. Balanced with a nice bready malt bill this “Wet Hop” pale ale is loaded with the freshness of whole cone hops, lemon and light citrus.

Farmhouse rye saison
7 Weeks of Staying Up All Night
Picnic Table Saison
A light 4.5% Summer saison made with fresh lemon zest and pink peppercorns. We’ve dubbed this bright & breezy beauty a “picnic table saison”. Citrusy aromas lead into a light, bready Pilsner malt body with a fresh peppery zip to finish it all off.
The Princess Wears Girl Pants
A hop forward Belgian Golden loaded with citrusy American & New Zealand Hops. Fresh and bright, just like Spring.
There's No Way Of Knowing
As Ol’ Man Winter begrudgingly releases us from his icy grip, Sweet Lady Spring swoops in and softly serenades us with her song. The snow slowly recedes, the days grow longer and we once again head outside to feel the warmth of a new vibrant season. What does this new season bring us? What does the future hold? Really, there’s no way of knowing. With the bright effervescence of a spring day and flowery aromas of fresh citrus, There’s No Way of Knowing Saison brings us all we love about this season. Light and breezy, it’s the perfect accompaniment to new beginnings.
So go outside and enjoy!
Pointless Marketing Lemon Peel Imperial Session IPA
American Pale Ale. Well it’s a brand new hybrid style born from the mind of Chris Glasser, winner of our third annual might moustache competition held at the Only Cafe. With help from Aaron Spinny, our head brewer, the two brought life to this unique and utterly drinkable style of ale! Brewed with lemon peel, caramel malts and copious amounts of hops. This beer has a lot going on. Light citrus and pine, bready malt body, superior drinkability. It’s everything and it’s nothing. We’d try to explain… but it would be pointless. Just drink it and see for yourself!
Hot Love Under a Cold Moon
Long Dark Voyage to Uranus
What’s in a name? Uranus by any other name would smell so sweet. That was written many eons ago by Toftorg Golshop, Ruler of the Third Empire of Uranus on one of his many voyages to earth (it was stolen and rewritten by “you know who” sometime later). And while on earth for one of those trips, Toftorg grew fond of the rich, robust stouts of Northern England. Designed to withstand the grueling voyage from Earth to Uranus, Long, Dark Voyage is an Uranal stout of the highest order. Tongue crushingly bitter and dry as a bone, this dark chocolate treat is quite dangerous and will sneak up on you from behind if you don’t keep your wits about you.
Enjoy the decadence of Uranus with a friend.
Sagemehl Stadt - Marzen
Brewed to celebrate our 1st annual Oktoberfest, this traditional German style festbier is malt forward with a a nice bready body and a hint of caramel. A gentle noble hop bitterness balances it all out. Prost!
Lone Pine West Coast IPA
You approach the solitary windswept pine as it sits stoically upon its tiny perch of Canadian Shield and you wonder to yourself, “Why does this beautiful tree stand alone?” Then as you step closer, in awe of its majestic splendour, a branch blows down and slaps you right across your face. Sawdust City’s Lone Pine IPA is aggressively hopped and bursting with flavours of pine and citrus, loaded with mounds of hops and balanced with a blend of 4 different malts. Like that truculent tree, each glass is like a pine bough across your face.
Bitter Beauty Double IPA
Sawdust City Brewing Company is teaming up with Canadian ‘song and dance man’ Jason Collett for Collaboration Nation 2016 to bring you Bitter Beauty IIPA. This classic American double IPA brings big malt flavour completely balanced by mounds of hops. Like Jason’s music, it’s the perfect companion to campfire sing-alongs. The clear night sky is painted with innumerable stars. The dancing campfire warms your outside while a cold beer cools your inside. The quiet is broken by notes that leap from a guitar and float toward the heavens. You gaze out at the lake and wonder if you’re dreaming. Sitting under the twinkling stars and listening to that magical guitar, you realize that you are in fact dreaming … with ‘eyes wide open’.
11.05 Tripel (Belgian Triple)
Brewed in collaboration with Ryan Morrow from Nickelbrook in honour of our shared birthday, this strong ale is brewed like a traditional triple but finished with Brett B. The longer you wait to drink it. The more Brett will develop.
Coriolis Effect Sour Ale
We all make choices and often those choices define who we are. Should we continue moving forward and stay with the status quo or should we turn in a different direction and strike out on our own? Together with our good friends at BarHop, we chose to move in a different direction. We elected to steer clear of the mundane and turn towards the obscure. The Coriolis Effect is an old world, traditional German-style Berliner Weiss, brewed with new world techniques. Refreshingly tart, brilliantly lively and perfect for a summer day, this unique beer style is exactly what you’re searching for if you’re looking to move in your own direction!
Everyday Magic Hazy IPA
This brand new recipe is one we have been perfecting for a while. We’re pretty sure you’ll agree that it’s been worth the wait when you try it. This fluffy, hazy IPA is refreshingly lively, brimming with fruity hop aromas and boasts a soft, luscious body. Light creamy coconut aromas lead into bold, tropical fruit flavours that will transport you from these dreary days of winter to the tropical paradise you’ve been dreaming of.
Slow Italian-style Pilsner
A crisp, clean, dry-hopped Pilsner, just in time for the holidays!
This lager was fermented very well and very slowly, then finally dry-hopped with heaps of Spalt hops. The long-awaited result offers aromas of lemon pepper, with a light, bready malt-body, and a balanced bitter finish. Sometimes beer takes its time and let you know when it’s done. We had the luxury of allowing this Pils to lallygag for a truly spectacular end-result. It also prompted a great reminder for us to take the time to slow down and enjoy time with those around us at this time of year. There’s no better beer to accompany that mantra than with this slow-fermented Italian-Style Pils.
Sam’s Take I’ve always been a fan of German-style pilsners (or pils). Since my days at the VLB, it’s been a bit of a white whale for me. I’ve always wanted to recreate the pils I had at the school…the flavour, the aroma…they were perfect! Taking those German pils roots and applying a more North American approach with dry hopping, we end up with what has now been called an “Italian Style Pils”. Popularized by Birrifico Italiano’s Tipopils, it’s basically the modernization of a traditional lager. Slow is our interpretation of this “new” style. Dry-hopped and then lagered for 4 weeks, it’s dry, crisp, clean with delicate aromas of lemon and spice. Sometimes you gotta take things Slow to get them right.
LDV Coffee & Vanilla
Our awesome Uranual Imperial Stout just got more awesomerer! Still big and bold with flavour of chocolate and roast, with coffee from Quietly! and Vanilla. You’re welcome!
Sam’s Take We’ve brewed LDV for 8 years now. Over those years, we’ve done a number of different iterations and enjoy trying different variations using LDV as the base. Last winter, we brewed Coffee Vanilla LDV and then Chocolate Oak-Aged LDV. We really liked the version with coffee and vanilla so we decided to do it again this year using a similar recipe. We loved the coffee we got from Cut Coffee last year, but Lee Knutilla, the head roaster has since opened up a new shop called Quietly Coffee. We tracked him down and asked if he’d be into working with us again. He was and was even able to get us beans from Katia Duke in Honduras; the same farm we used last year. We feel this year’s version is even better than last year’s!
Coffee & Vanilla LDV
Our awesome Uranual Imperial Stout just got more awesomerer! Still big and bold with flavours of chocolate and roast, but infused with copious amounts of ‘Katia Duke’ Lot 7 coffee from our friends at Cut Coffee. Then lightly sweetened with the finish of vanilla to create a huge flavour that’s dangerously smooth.
Crujiente Boi Mexican Lager
Crujiente Boi is a crisp, hoppy, very crushable lager, perfect for the start to your New Year. Vibrantly bright and clean, this hop forward Mexican lager is loaded with juicy hop flavour, while still remaining crispy and super crushable. The perfect foil to the post Holiday blues.
Brewed with our good pals at Cassel Brewery.
Anticipation is Freshly Zambonied Ice
The last release in our series of winter Belgian style beers, Anticipation is Freshly Zambonied Ice is a Belgian Strong Golden Ale. It pours a deep, burnt gold, with a fluffy white cap. Very effervescent, this ale is loaded with aromas of clove, spice and apple. It’s balanced with flavours of apple, spice and bubblegum, and it is deceptively drinkable. Flavourful, with a semi-sweet finish, Anticipation is Freshly Zambonied Ice is wonderful on its own or accompanied by your favourite meal.
