We are dedicated to bringing you the finest in premium craft beer; tried-and-true year-round brands, as well as exciting seasonal beers. Rest assured, all of our beers are brewed in small batches using all-natural ingredients right here in Baysville, Ontario. The result: beer that sets the standard for quality and flavour, while staying true to our Northern roots.
Wild North Summer Session Ale
Light-bodied and refreshing, American-style hops from Clear Valley Hop Farm near Collingwood give this red pale ale a nice citrus zing and floral notes, while crystal malt lends a balancing hint of caramel and toffee. Best served cold and savoured in the shade on a hot sunny day.
Old North Mocha Porter
Roasted barley and chocolate malt lend this porter its full, rich character, and the addition of locally roasted coffee takes the flavour profile still further. This is the fourth year we’ve brought you this delicious autumn seasonal, brewed in collaboration with Diesel House Coffee Roasters. A fitting tribute to the Old North we call home.
Pours almost black with beautifully creamy, mocha-coloured foam. Upon further inspection, the colours are actually deep ruby, garnet and dark brown. The aromas include cappuccino, mocha, chocolate and vanilla with a hint of molasses and pie crust. The flavours include subtle sweetness with dark chocolate, mild coffee and tiramisu. The mouth feel is dry (fairly mild) with some initial sweetness. The finish is medium-to-moderate bitterness that lingers and delivers a nice coffee profile that arrives quite late.

Head Brewer Dan and his team get to show off their creative muscle every few months, producing a new, one-off brew that will get craft beer lovers’ tongues wagging.

Spark House Red Ale
Pours with a deep copper, almost reddish-brown hue resembling teak, with an ivory-coloured foam that lingers nicely. The aromatics are all malt – caramel, toffee, roasted grains, darker breads like pumpernickel and rye, and a very slight note of smokiness. The flavours are roasted grain, nutty and toffee with that subtle smoky note. The mouth feel is dry and roasted with moderate bitterness and a well-balanced finish.

Crosswind Pale Ale
Although pale ale is one of the world’s most common beer styles, Crosswind is anything but. Light in colour but not flavour, our pale ale is a surefire hit among drinkers of full-flavoured premium imports.
TASTING NOTES Pours with a brilliant golden colour and a nice white foam in which the bubbles are generous. The aromatics are primarily citrus and range between lemon and grapefruit. There are also hints of caramel, toasted grains and a touch of fresh apple. The flavours include toasted bread and a slight note of toffee and stewed apple. The mouth feel is quite dry and the finish is quick with some mild, lingering
Spring Maple Belgian Blonde Ale
Belgian yeast and noble hops mingle with the unmistakably Canadian taste of maple syrup from the Ontario Maple Syrup Producers Association to give Spring Maple its unique flavour. Notes of vanilla, caramel and nut combine with a subtle spice for a smooth, remarkably refreshing taste. What better way to welcome spring? This unique beer delivers a beautiful amber colour with a slight off-white foam collar. The nose is maple with a good amount of hazelnut (noisette) accented by vanilla and caramel. After a few moments, there are aromas of cherries and just a touch of spice. The body of the beer is slightly sweet, reminiscent of caramelized apples with a nutmeg finish. There is also a slight floral taste that arrives a little late. The finish is smooth with a gentle bitterness that is surprisingly refreshing.
Golden Chai Ale
Breathe in, breathe out, There’s nothing like cozying up during the winter thaw with a good book, blanket, and a fresh cup of beer. Our gently spiced beer is infused with real Chai tea. We suggest you serve it up with the bag out. Spring is finally here. TASTING NOTES Fresh, spicy aromatics introduce this effervescent brew. Chai tea offers a hint of cardamom, cinnamon and clove. Magnum hops and a splash of pure orange zest round out the finish.
Top Shelf Vienna Lager
Crafted using noble German hops and European malt, Top Shelf is a flavourful yet easy-drinking lager that finishes smooth and clean as the rink after a Zamboni run. A portion of the proceeds for each beer sold goes to support the NHL Alumni Association and the many charitable organizations it supports. This red European style lager pours with a brilliant copper hue and a gentle cream foam. Vienna and Crystal malts lend a smooth malt aroma with a hint of toast and caramel. Notes of cherry at the start quickly changes to refreshingly crusty bread flavours with the mild bitterness of Noble German hops. The finish is crisp and clean with a pleasant dryness. Overall, very refreshing, smooth and well balanced.

Named for its bold clean-cut flavour, Broken Axe American Pale Ale is a crisp and juicy reward to a hard day’s work. The welcoming aromas of peach and apricot develop into a tropical splash of lemon and grapefruit. Centennial, Wakatu and Idaho 7 hops are on double-duty, offering a balance of medium bitter flavour with a sharp citrus twist. Chalk it up as another cutting edge creation by our homegrown brewers: Mike Pawlick and Andrew Walsh. Malts: 2-Row Pale, Vienna, Carafoam, Wheat Malt Hops: Centennial, Idaho 7, Wakatu.
