Pilsners are pale lagers named for the city of Pilsen in the Czech Republic, where the style originates. Farm Table: Pils (North-German Style) is a traditional Pilsner with the regional characteristics of those brewed in the northern part of Germany. Tasting Notes Farm Table: Pils is a pale straw colour, with great clarity and a billowy white head. The aroma is herbal and hoppy with some grainy, malty notes. A refreshing hop bite dominates the flavour which is counterbalanced by clean malt sweetness. The finish is quick and dry.

Summer Altbier Our local outdoor summer festival season launches in May, and so does our summer seasonal beer, Festivale. We created this tasty, refreshing beer to enjoy at the many festivals and special fundraisers that we support during the warm, long days of summer. Festivale is based on a rare German style of ale, know as Alt (German for old, referring to how long this style has been in existence.) It originates from the northern part of the Rhineland, and is something of a cousin beer to our Lug Tread. Festivale is an amber ale, with balanced high-intensity maltiness and hop presence. Caramunich malts give Festivale its colour and a rich caramel sweetness. Festivale bucks the trend of pale summer beers, offering up amber hues and tastiness for a unique result that is both quaffable and refreshing.

La Formidable is an American-Belgo IPA, a relatively new hybrid beer style that crosses bold, citrusy American-style hop aromas with the signature fruity, spicy and earthy elements of Belgian yeast.
La Formidable is from Gigantic Brewing, the second artist to sign onto B-Side Brewing Label, and part of a portfolio of international brands of excellence being produced fresh and locally for the Ontario market.
Launched in 2013, B-Side Brewing Label (www.b-side.ca) is “like a record label, for beer.” The label signs international craft brewer “artists” of renown to the brewing label. These international artist breweries create inspired recipes that are brewed in Ontario and made available fresh in the local market. B-Side beers are made with certified organic ingredients, and brewed in Vankleek Hill, Ont., at Beau’s.

Farm Table Series are sessionable beers inspired by tradition and brewed true to a classic style. Märzen is the traditional Oktoberfest style of beer. This orangey-amber, malty lager has just the right amount of hops to balance the Munich malts, and features an ultra-clean finish to complete the package. Märzen is a traditional German lager style that takes its name from the month of March when it was historically brewed. The beer would then be lagered in cellars through the summer and then released for Oktoberfest celebrations. Farm Table Marzen’s bready, biscuity malt backbone is complemented by a firm hop presence that lends balancing bitterness, and promotes its high drinkability.

Expect a great drinkable beer, with traditional Belgian yeast character. History & Style Milder in alcohol than a dubbel or tripel, Patersbier (“Father’s beer”) was traditionally brewed by monks to enjoy within the walls of their abbey, while they worked away at brewing their famous strong ales. Tasting Notes Pours a slightly hazy blond with dense, rocky white foam. Sweet honeyed malt with floral overtones dominate the aroma. The flavour features initial malt sweetness. Peppery notes from the yeast lend complexity while hop bitterness provides balance. The finish is bright, clean and crisp.

A delicious duo meets a classic British beer style in what we are calling a “PB & grape” porter. The nicely roasted malt character of a porter ale gets a fun, flavourful twist with the addition of organic peanut butter and concord grape juice. A roasty brown ale with hundreds of years of history behind it, porter beer originated in London and was very popular in the 18th and 19th centuries. PB & grape is a sandwich, popular in North America, made with a layer of peanut butter & grape jelly between two slices of bread… or one slice, folded over, if you prefer. Elephant Monsoon pours a nearly opaque brown/black with a tan head. The aroma is a medley of mocha, grape and peanut notes. Koru Belgian-Style Pale Ale boasts interesting spicy, peppery yeast notes, with tropical fruit inflections from New Zealand nelson sauvin and rakau hops. Complex and tasty, with a dry finish. More sessionable than bigger Belgian styles, the Belgian Pale Ale came to prominence in the mid-20th century. A balanced fruity and floral hop character is complemented by the peppery, spicy notes of Belgian yeast. Beau’s first created Koru in 2012 for our annual Vankleek Hill Oktoberfest celebration. Koru pours deep gold with white frothy foam. The aroma combines tropical fruit with citrusy notes such as candied orange. Koru is medium-bodied and the flavours are peppery and fruity suggesting mango, papaya, pineapple and grapefruit. The finish offers lingering spice.

Embittermint is an I.P.A. that blends and balances the more delicate and floral characteristics of select hops and mints. Brewed with organic lemon balm, spearmint and peppermint. Golden Vox is a rye pale lagered ale that was conceived and brewed collaboratively between Beau’s and Canadian hip hop artist k-os. The recipe is a blend of rye and barley malts, with just a kiss of whiskey, courtesy of a light aging on rye-soaked oak spirals. History & Style Rye pale lagered ale is something of a hybrid creation, blending the noticeable citrusy hop character of an American Pale Ale with the spicy elements of rye malt, and adding in the signature crisp finish of a lagered ale. An aging on rye-whiskey-soaked oak adds subtle complexity to this balanced, approachable pale-golden beer. Tasting Notes Smooth malty notes are kept in balance by the citrus & slight pine hop character. Peppery undertones derived from the rye malt harmonize with gentle warmth and subtle toastiness from light aging on rye-whiskey-soaked oak. Haters Gonna Hate is an extra-strong interpretation of our flagship beer Lug Tread, which is a Kölsch-style lagered ale. Tropical aromas and a mildly “catty” character are contributed with the addition of some Nelson-Sauvin hops. History & Style Haters Gonna Hate is a tribute to the very first batch of Lug Tread, which ended up getting accidentally “imperialized” – that is, brewed to higher strength and intensity – due to some faulty beer-making equipment. The results were super tasty and ended up winning “Best of the Fest” at the Golden Tap Awards. Ten years later, we’ve recreated this happy accident with Haters Gonna Hate. Tasting Notes Haters Gonna Hate is unfiltered, strong, and has a golden orange hue. The aroma suggests funky tropical fruits such as mango or papaya, and is also enhanced with some mildly musky Nelson Sauvin hops. A clean malt presence allows for full display of the hop-driven fruit flavours and balanced moderate-to-high bitterness.

Oud Bruin (Beau’s + Kissmeyer Collab.) 8 % • Wild Oats Series History & Style Oud Bruin is a style of beer that originates in the Flanders region of Belgium, typically aged for a long period and fermented with wild yeast and bacteria. Dates, maple syrup and a residency in pinot noir barrels have added complexity to this collaborative creation, which was brewed during Beau’s Oktoberfest in 2012. Tasting Notes Pours mahogany with a thin white foam. The aroma is an enticing medley of red wine, sour cherry and a faint nuttiness. The flavour is tart with tannic cherry notes and a hint of hazelnut. The finish is dry with residual oaky wine notes.

This malt-focused sessionable ale is a deep-copper-colour, with mild-to-moderate caramel flavour and balanced hop presence. Scottish-Style Ale 4.7% • Farm Table Series HISTORY & STYLE Originating in the 1800s, Scottish ales were classified on a “shilling” scale based on their alcohol strength, typically ranging from 60 shilling (“light”) to 90 (“wee heavy”). In the midst of these extremes are 80 shilling ales (“export”), classic crowd-pleasers and a style that has stood the test of time. TASTING NOTES 80 Shilling pours a deep copper colour. The malt character is predominant, with a few esters, and just enough hops for balance. This classic Scottish ale possesses a toasted flavour and dry finish, with a mild-to-moderate caramel presence.

The traditionally weissbier is complemented and accentuated by a juicy, fruity hop selection and ginger spice. Tasting Notes: Hazy and pale gold in colour. Gruit Ale 4.5% • Gruit Series History & Style Beau’s Gruit Series takes inspiration from centuries-old brewing tradition; a time before the Bavarian Purity Act of 1516 that declared that all beer be made solely with barley, hops, and water. In gruit ale, herbs, spices and other botanicals replace a dominant hop character, throwing open the door to experimentation. Each gruit in this series will have a unique combination of ingredients and flavours. Tasting Notes Buenos Dias pours light yellow with a slight haze and white foam. One Ping Only is dark as the stormy Baltic sea, with thick, chewy malts that satisfy, and rich aromas of chocolate, raisins and caramel. Barley and rye malts, oats, and some rare Polish Marynka hops create layers upon layers of complexity. Baltic porters share some commonalities with Russian Imperial Stouts, brewed strong to last long voyages across the sea. One Ping Only was first brewed in 2015 for Beau’s Oktoberfest, where it won “fan’s choice” at the festival and a place in the 2016 Mix Pack. Aromas of chocolate, raisins and caramel lead into a rich malty sweetness on the palate. Notes of stone fruit, licorice, pleasing alcohol warmth and lots of complexity. Finishes dry with a slight coffee character.

Polaris Pale Ale is brewed with wild-harvested spruce tips, Québec-grown hops and Ontario wheat. This inspired, tasty beer was brewed by Beau’s to honour all the deserving artists and albums nominated for the 2016 Polaris Music Prize, and offer a tip of the hat to this uniquely Canadian reward for artistic merit. The Polaris Music Prize is a not-for-profit organization that annually honours and rewards artists who produce Canadian music albums of distinction. A select panel of music critics judge and award the Prize without regard to musical genre or commercial popularity. Pours a light orange with a frothy white head. The predominantly woodland aroma of spruce also offers subtle notes of citrusy hops. The flavour is mildly peppery and zesty spruce is echoed here too, a medium malt backbone holds it all in place. The finish is clean and snappy.

Return of the Mumme is a medieval-era ale with a bouquet of botanicals and spices. Our well-traveled interpretation of the style is brewed with Fair Trade organic black tea from India, Sri Lankan cloves and a blend of Egyptian spices including caraway seed, marjoram and thyme. Mumme is a medieval ale that shares characteristics with a modern altbier. Return of the Mumme was first brewed in 2015 for Beau’s Oktoberfest, where it won “fan’s choice” at the festival and a place in the 2016 Mix Pack. Pours a dark orange with a frothy tan head. Initial aromas of gingerbread and malt, and black licorice rise up from a subtle traditional hop aroma. Mouthfeel is smooth and slightly creamy, leaving a residual sweetness to balance the spices and the hops.

Collabrrrewnaut is a classic Bohemian-style Pilsner blended with organic fairtrade coffee from Honduras, specially selected for this collaboration by our friends at Ottawa’s Bridgehead Roastery. This beer was lagered for three weeks, then cold-infused with the coffee to create an unlikely but harmonious juxtaposition of light and dark. Espresso Pilsner 5.0% • Wild Oats Series No. 36 History & Style The world’s first blond lager, Bohemian pilsners were first brewed in the mid-19th century. The style originated in the City of Plzen (Pilsen), part of the present-day Czech Republic. Known for its light, clear colour and clean, crisp finish, our Collabrrrewnaut sends the pilsner brewing tradition hurtling space years ahead of its time with a espresso-roast coffee infusion. The Collabrrrewnaut recipe was created and first brewed in 2014 as part of Beau’s annual FeBREWary celebrations. Tasting Notes Collabrrrewnaut has an herbal, spicy noble hop aroma, with a subtle yet ever-present espresso note that lingers like the scent of coffee in a busy Czech café. The beer possesses a mild bitterness, with a clean dry finish. Restrained nuances courtesy of the coffee suggest dried figs, nutty richness and chocolate as they intermingle with the classic Pilsner style.

Imperious Schwartzbier Wild Oats No. 23 Dark Helmüt is an extra-strong version of a German black lager. It displays a mellow roasted character that is juxtaposed with the enjoyable lager crispness. History & Style Schwarzbier is the name for the German black lager style. It has refined mocha inflections and a surprisingly subtle roasted flavour for a beer as dark as the furthest reaches of the galaxy. We first brewed this beer recipe in 2012 for our annual Beau’s Oktoberfest celebrations. Tasting Notes Malty, bready notes (think pumpernickel without caraway) provide the backdrop to this clean, crisp beer. Malt depth maintains a pleasant balance and keeps the bigger alcohol presence nicely integrated. The finish is bright and crisp.

Spicy, earthy, and with a gentle touch of sweetness, this aromatic creation brings together two of the world’s most popular brews – tea and beer! History & Style Both rooibos and honeybush are herbal components of traditional teas made in South Africa. The certified organic fairtrade rooibos and honeybush teas used in Bush Fire were harvested in South Africa. These teas were steeped during the brewing process into a base blonde ale style. Tasting Notes Bush Fire has initial aromas of earthy rooibos and sweet honeybush, rounded out with spiciness from Whitbread Golding Variety hops. Similar earthy-sweet flavours are present, with spicy notes and a mild tartness courtesy of rosehips and hops. A bready malt profile helps to balance out the flavours, and a dry finish enhances the spicy and earthy character of the beer.

History & Style: The Quadrupel (or Quad) is a strong Belgian style of ale known for its dark tint, full body and bold malt flavour. Dunkel 5.7% • Farm Table History & Style: Among the most appropriately named styles of beer, the term “dunkel” is the German word for “dark.” Dunkel’s history stretches back to the Bavarian Purity Act of 1516, which decreed that brewers use only barley, hops and water in beer-making – clearing a path for the dunkel, which met both these standards and satisfied the palates of the people of Munich. This traditional Bavarian lager rose in prominence, with a legacy that remains to this day. Dunkel is luscious and toasty in flavour, yet with smooth lager crispness. History & Style: The story of milk stouts goes back to the late 1800s, when stouts made with milk sugar (lactose) were introduced. Also known as sweet stouts, the lactose in a milk stout is not consumed by yeast during fermentation, lending a mild sweetness to the resulting beer. Ours is a slightly more robust interpretation of the style, and showcases the appeal of a milk stout’s silky mouthfeel plus the sweet flavour of organic cherries. The Wag the Wolf artwork features a striking graphic wolf with heterochromatic eyes. Tasting Notes Wag the Wolf pours a hazy yellow with dense white foam. At 85 IBUs, Double Identity is by no means subtle. It features a double-dose of two of our favourite organic hops, Centennial and Nelson-Sauvin, with smaller additions of El Dorado and Chinook. Is the perception of extreme hoppiness strictly science, or partly sleight of hand? Like a true Double Identity, successful execution lies in getting them both just right. History A boat-load of extra hops (a natural preservative) made India Pale Ales (I.P.A.s) historically better suited for long voyages when shipping to British soldiers stationed afar, including India. Their distinct taste caught on, and now these ales are widely known and enjoyed for their aggressively hopped aromas and flavours. D.I.P.A.s (Double I.P.A.s) are bigged up in both strength and hop character. In Double Identity, a pale ale base malt lets the hops sing out. Complex and contemplative, and with well-integrated alcohol warmth, The Bottle Imp is best served in a snifter, sipped slowly and savoured. History & Style Beau’s first brewed The Bottle Imp in 2013 as part of its Pro-Am Series. The recipe was co-created with David Thompson, who won the Toronto Beer Week Homebrew Contest and the prize of coming to Beau’s for a day to brew a beer. In 2014 The Bottle Imp took Bronze at the Canadian Brewing Awards, as well as first place at the National Organic Craft Beer Competition in California. The Russian Imperial Stout is brewed to weigh in high on alcohol, with the roasted, malty character typical of a stout. These imperial stouts were first brewed in England in the 18th century, and exported to Russia for the pleasure of Czarina Catherine II and her court. And the name? The Bottle Imp is a haunting turn-of-the-century tale by Robert Louis Stevenson about risking eternal damnation of the soul to have everything on earth one’s heart desires. We suggest pairing the beer and the story on a cold night by a crackling fire. Tasting Notes The Bottle Imp is black, rich and malty, with a mouthfeel best described as liquid silk. The roasty dark malt character is complemented by fruit notes that suggest dates and figs, as well as subtle notes of black licorice. It is well-hopped to provide balance to the malts, keeping the residual sweetness in check. The coffee character is fully integrated, and a complement to the roast of the malts. The experience is rich and intense, with gentle alcohol warmth, and a long, complex finish. The coffee infused into The Bottle Imp are a Nicaraguan dark roast from the San Juan del Rio Coco region (toasted nuts, spicy and smoky flavours) and a Guatemalan medium-roast called “The Fruit of Concepción” (blueberry, strawberry and caramel flavours), both roasted by Bridgehead in Ottawa. Sahti is a traditional beer style from Finland, brewed with a variety of malts, bright juniper berries, and resinous juniper boughs. It is one of the world’s oldest continuously brewed beers. History & Style Sahti has a history that goes back to the 16th century, when it was brewed in hand-made wooden vessels and filtered through juniper boughs. Our certified organic version of this ancient ale is brewed with barley, rye, and wheat malts, and flaked oats. Locally foraged juniper boughs were used to replicate the traditional brewing method, and organic juniper berries added in the boil. We first brewed Jänis in 2017 as an exclusive beer for Beau’s Oktoberfest. The label is inspired by Scandinavian design and the art of folk craft – Jänis is the Finnish word for hare. Tasting Notes Jänis pours deep orange with a white head. The aroma is a spicy medley of citrus, pepper and clove. The flavour is bright and refreshing, with elements of fruit and pepper. Halcyon will lure you to the sour side with this approachable, lightly tart and refreshing sour, Echo Chamber. History & Style Dry-hopped sours are a relative newcomer in modern brewing. The late-addition hopping contributes the citrus fruit aromas, which naturally are complemented by the refreshing acidity of a sour. Echo Chamber is aged in red wine barrels for 3-6 months, then blended and dry hopped with Idaho 7 and cryo ekuanot varieties. Tasting Notes Echo Chamber pours a hazy straw gold with a bit of foam. The aroma moves into citrus with faint grassy hay notes in the background. The beer is very tart to begin then gradually softens to balanced acidity. Fruity tang throughout adds to the refreshing nature of the beer. Echo Chamber finishes dry with a little bit of barrel tannin rounding out the finish. The recipe includes Newfoundland partridgeberries, birch bark and sea salt foraged from the island, and malt smoked with myrrh collected from Island pine, spruce and fir. History & Style Gose is a German beer style that originated in and around the Saxon town of Leipzig. The saltiness, which typifies the style, is attributable to the mineral-rich aquifers that supplied the water for brew houses in the region. Our Fogo Island version of the style adds in the elements of hand-smoked malt and tart Newfoundland partridgeberries for a taste of the local terroir. 49° 54°’s label art illustrates saltbox housing and fishing stages common to Fogo Island, while its artistic style is a nod to the Inn’s modern take on traditional Newfoundland outport design. 49° 54°’s foraged ingredients from Fogo Island were acquired through Shorefast Foundation, a social enterprise whose mission is to build economic and cultural resilience on Fogo Island by spearheading local charitable programs and social businesses (www.shorefast.org). History & Style We’ve taken Canadian birch and its strong-yet-pliable bark beyond the iconic canoe with the creation of Paper Chase. Working with birch in two ways brings out complexity of aroma and flavour. The birch bark is hand-harvested and used as an ingredient, and then the beer ages for a time on roasted birchwood. On the label, two paper airplanes chase each other in a mid-century modern graphic style. Tasting Notes Paper Chase pours copper with a light haze and white foam. New Lang Syne is a Belgian tripel that has been aging in white wine barrels since the summer. The strong (9%) deep golden ale is bottle-conditioned. Tripels originate in the Trappist breweries of Belgium. They are known for being appreciably strong, yet deliciously drinkable beers. A portion of the 2015 vintage of New Lang Syne was aged in pinot grigio barrels for four months, then was blended back into the rest of the batch for added complexity. First impressions of New Lang Syne are of lemon zest, as well as papaya and tropical fruits. A white wine character harmonizes with firm tannins, and French and German hop varieties provide suitable balance. A bright, sparkling mouthfeel leads into a finish that is distinctively fruity, with subtle peppery notes.

History & Style Strong Patrick is our version of the classic style from the Emerald Isle. This dark, strong and richly malty German-style lager will warm and satisfy on a cold winter’s day. It is brewed authentic to style, with all-German organic malts and and organic perle hops from Austria. History & Style Bock is traditionally a malty and lightly hopped beer. The style originated in the 14th century in the Saxon town of Einbeck (Germany). It was later adopted by Munich brewers in the 17th century, where the regional Bavarian accent meant citizens pronounced “Einbeck” as “ein Bock” (a billy goat), and the style formally became known as Bock. To pay homage to these origins, a goat is often used on Bock labels. Bocks range from light copper to dark brown in colour, with urbock at the darker end of the spectrum. Tasting Notes Urbock pours deep brown with garnet highlights and a beige foam. The aroma offers bready dark malt and caramel notes with dark fruit nuances. Beau’s celebrates International Gruit Day on Feb. 1, 2019 with the release of The Astromancer, a sage gruit. We used a combination of organic whole leaf and rubbed sage in brewing The Astromancer to draw out both herbal character and essential sage flavours. Rye malts add a peppery spice that complements the herbal component of this ancient ale. History & Style In gruit ales, herbs, spices and other botanicals replace a dominant hop character, throwing open the door to experimentation. Sage takes its place alongside yarrow and bog myrtle in the ancient history of spicing and helping to naturally preserve European gruit ales. The beer name draws on the fantasy character of a magician or astrologer, and plays on the double meaning of sage as a type of wise wizard, as well as brewing gruits being a kind of ancient wisdom. The artwork is in a slightly organic, art deco style using sage green to highlight the key ingredient. Tasting Notes The Astromancer pours mahogany with a tan foam. The aroma bursts with herbal sage. The flavour features sweet caramel malt with peppery spice notes and minty sage. The finish is spicy and dry. History & Style The stout beer style evolved from porters during the 19th century in Ireland. The Dry Irish Stout is a lower-alcohol rendition that uses roasted barley and/or a combination of black malts to achieve both its depth of colour, and its signature roasted aroma and flavour. The label features a real Irish pub modeled on one in Ballyvaughan, County Clare, and the tile mosaic art style suggests the look of the pub’s tile floor. The sign on the door says “closed” in Irish Gaelic, but as you can see there’s still some good craic inside! Tasting Notes Dry Irish Stout pours nearly black with mahogany highlights and a creamy off-white foam. The aroma offers an appetizing mix of dark chocolate, coffee and cereal. Altbier is an amber-hued, finely balanced lagered ale, something of a cousin to Beau’s flagship beer, Lug Tread. While both beers are German-style lagered ales, Altbier offers up high-intensity, balanced maltiness and more hop presence. It has subtle fruity ale notes, and a crisp lager finish. History & Style Alt is a German style of ale that originates from the northern part of the Rhineland. Caramunich malts give Altbier its colour and a subtle caramel sweetness. This beer recipe is a true Beau’s classic — in fact, Brewmaster Matthew O’Hara had been tinkering with it even before Beau’s opened its doors. It was first released in 2008 as “Festivale,” a signature release for Ottawa’s Jazz Festival. It has popped up several times in the Beau’s repertoire over the past decade, garnering awards in 2009 and 2012. The flags in the artwork are a subtle tribute to the story of this beer.
